1 lb chicken, cut into bite-sized pieces
2 tbsp oil
1 onion, finely chopped
2 garlic cloves, minced
1 tbsp ginger, grated
2 tomatoes, chopped
1 tsp turmeric powder
2 tsp chili powder
2 tbsp curry powder
1 tsp salt
1 cup water
1/4 cup cilantro, chopped
In a large skillet, heat the oil over medium heat. Add the onions, garlic, and ginger and sauté until the onions are translucent.
Add the tomatoes and cook until they are soft and mushy.
Add the chicken to the skillet and sauté until it is browned on all sides.
Add the turmeric, chili powder, curry powder, and salt to the skillet and stir well.
Add the water and bring the mixture to a boil. Reduce the heat and let the curry simmer for 30 minutes or until the chicken is fully cooked.
Add the chopped cilantro to the skillet and stir well.
Serve hot with rice or naan.
