Ingredients
1 cup fresh curry leaves
1 onion, chopped
3-4 garlic cloves, chopped
2-3 green chilies, chopped

1/2 tsp cumin seeds

1/2 tsp mustard seeds

1/2 tsp urad dal

1/2 tsp chana dal

1/4 tsp asafoetida powder

1/4 tsp turmeric powder

1 tbsp tamarind paste
Salt, to taste
3 tbsp oil
Directions
In a pan, heat oil over medium heat. Add mustard seeds and allow them to splutter.
Add cumin seeds, urad dal, and chana dal. Sauté for 1-2 minutes or until the dal turns golden brown.
Add asafoetida powder, turmeric powder, chopped onion, garlic, ginger, and green chillies. Sauté for 2-3 minutes, or until the onion turns translucent.
Add curry leaves and salt. Sauté for another 3-4 minutes or until the curry leaves turn crispy.
Add tamarind paste and mix well. Cook for 2-3 minutes, or until the oil separates from the mixture.
Remove from heat and allow it to cool.
Once cooled, grind the mixture into a smooth paste.
Transfer the mixture back to the pan and cook for another 2–3 minutes.
Your Karuvepillai Thokku is ready! Serve with your favorite dish and enjoy the burst of flavors.
