Ingredients

2 cups of basmati rice
3 cups of water
1 cinnamon stick
1 onion, finely chopped
2 garlic cloves, minced

1 tsp cumin seeds

1 tsp mustard seeds

1 tsp turmeric powder
Salt, to taste

2 tbsp coconut oil
Directions
Rinse the rice in cold water until the water runs clear. Drain and set aside.
In a large pot, heat the coconut oil over medium heat. Add the cinnamon stick, cumin seeds, and mustard seeds, and sauté for 1-2 minutes until fragrant.
Add the chopped onion and garlic and sauté for another 2-3 minutes until the onion is translucent.
Add the turmeric powder and salt and mix well.
Add the rice and stir to coat it with the spices.
Pour in the water and bring it to a boil. Reduce the heat to low, cover the pot with a lid, and simmer for 20-25 minutes or until the rice is cooked and the water is absorbed.
Once done, fluff the rice with a fork and remove the cinnamon stick before serving.
