1 cup fenugreek seeds (methi seeds)
2 tablespoons oil

1 teaspoon mustard seeds

1 onion, finely chopped
2 tomatoes, pureed

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

Directions
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter and release their aroma.
Add finely chopped onions to the pan and sauté until they turn translucent and golden brown.
Stir in the ginger-garlic paste and cook for a minute until the raw aroma dissipates.
Add the tomato purée to the pan and cook for a few minutes until the mixture thickens slightly.
Reduce the heat to low and add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a minute to let the spices release their flavors.
Rinse the fenugreek seeds thoroughly and add them to the pan. Stir well to coat the seeds with the spice mixture.
Pour enough water to cover the fenugreek seeds and bring the curry to a gentle simmer.
Cover the pan and cook on low heat for approximately 20 minutes until the fenugreek seeds are tender and cooked through.
